Garlic Chicken


  1. 400 gms chicken with bones

  2. 1 capsicum cubed

  3. 2 onions cubed

  4. 2 tbsp chopped spring onion

  5. 2 green chillies slit

  6. 2 dry red chillies paste

  7. 1 tbsp vinegar

  8. 1 tbsp red chilli sauce

  9. 1 tbsp hot and sweet tomato sauce

  10. 2 tbsp dark soya sauce

  11. 3 tbsp refined oil

  12. 1 tbsp garlic minced

  13. 1 tsp garlic paste

  14. To taste salt

  15. 1 tsp black pepper powder

  16. 1 tsp dry red chilli paste or powder

  17. 1/2 cup chicken stock or water

  18. 2 tbsp cornflour

  19. 1 tbsp all purpose flour


  1. Marinate chicken with soya sauce, salt,vinegar,pepper and cornflour.Heat oil in a pan.Fry chicken in medium flame till golden brown. Set aside.In 1 tbsp oil sprinkle chopped garlic and sliced green chillies and sauté for few seconds.Add cubed onion and capsicum and stir fry.Then add the fried chicken and toss.Add salt,pepper, red chilli paste,garlic paste, hot and sweet tomato sauce,soya sauce,red chilli sauce,ajinomoto and toss.

  2. Add chicken stock or water.Adjust salt and red chilli paste as needed.Add a pinch of sugar and cook in medium flame.Make a slurry of cornflour and add it to the chicken.Add few chopped onion flower stalk and toss.Garnish with spring onion or onion flower stalk.Serve hot as a starter or with mixed chowmein or Chinese fried rice.
